Caesar has to be one of my favorite salad dressings, tied closely with Ranch dressing. However, commercial varieties are full of additives, preservatives, MSG and pro-inflammatory vegetable oils. Luckily, both of these are easy to make at home and taste SO much better than their industrially processed counterparts. Previously I shared my recipe for homemade Ranch dressing, today I am sharing my Caesar dressing. Feel free to adjust the ingredients to suit your tastes- see notes about making a Spicy Caesar.
Simple Homemade Caesar Dressing

Ingredients:
1 pasture-raised, organic egg yolk
1-2 tsp organic Dijon-style mustard
1 TBL lemon juice (freshly squeezed)
1/2 cup extra virgin olive oil
1 clove garlic, grated or minced
Dash organic onion powder
Dash of cayenne pepper
½ tsp fish sauce, or to taste
1 TBL fresh ground raw parmesan cheese
½-1 tsp unrefined sea salt, or to taste
Freshly ground black pepper
Directions:
Combine all ingredients in a wide mouth glass mason jar and blend using an immersion blender. Taste and adjust seasonings to your liking. You can thin with a bit of water if dressing is too thick.
Notes:
Like Spicy Caesar? Adjust the cayenne to your liking, adding a dash or two at a time, tasting between additions.
