This sugar is wonderful to have around your home as a special treat and for parties. It also makes a wonderful gift any time of the year.
Warm Vanilla Sugar

Ingredients:
1 cup unbleached, organic cane sugar
3-4 vanilla beans
Directions:
Preheat oven to 200 F.
Working on a solid surface, split each vanilla bean lengthwise and scrape out the vanilla “caviar” or flecks inside. It will look thick, dark and kind of gooey. Save the now empty vanilla pods.
On to a parchment lined cookie sheet, pour the sugar and add vanilla caviar/flecks on top of sugar. Using your hands, combine well, massing vanilla into the sugar granules as thoroughly as possible.
Spread out in a thin layer and bake for 10-15 minutes, or until vanilla flecks look dried.
Remove from oven and allow to cool slightly before crumbling the sugar with clean hands, breaking up any clumps that may have formed during baking. Store in an airtight container with the empty vanilla pods, shaking once in a while.
Use as you would any sugar, but especially in items where the subtle, warm vanilla fragrance will shine (tea, coffee, on top of grain-free sugar cookies, in crispy glazed walnuts, etc.)
Note:
You can repeat this process with new beans, or simply refill the jar with sugar, reusing the pods several times. They can also be added to homemade vanilla extract. Vanilla beans are precious, so use them as long as you can!
